Fresh Eggs…not always good!
As a new farmer, cooking and baking with fresh ingredients is one of the wonderful fruits of living on a farm. So you can imagine my surprise and sorrow at the discovery that farm fresh eggs are nearly impossible to peel! We are a family that loves egg salad and it looked as if I could not make it unless I bought week old eggs from the grocery. That was until I was browsing my newest cookbook (a covid clickbait purchase) and discovered the solution to my problem!
My answer was found in Scratch, by Maria Rodale. Here is what Maria has to say about fresh hard boiled eggs:
“Anyone who has ever tried to make hard-boiled eggs from fresh organic eggs knows they’re almost impossible to peel without significantly damaging the shape. After decades of struggling…I think someone finally figured it out! Local Pennsylvania chef Allen Schanbacher suggested I try steaming them and it works! Place the eggs in a steam basket set over boiling water in a pot, cover, and steam for 12 minutes for hard-boiled eggs.”
Wow! The Findley family’s egg salad has been saved and improved by using farm fresh eggs!
